Spinach Salad with Poppyseed Dressing

Make the dressing by blending together the following ingredients in a blender:
1 1/2 Tbsp. poppy seeds
3/4 cup white vinegar
1 1/2 cups salad oil
1 1/2 Tbsp. Grated yellow onion
1 1/2 tsp. salt
3/4 tsp. dry mustard (I have used regular or spicy mustard)
3/4 cup sugar

Blend for 2 minutes in blender and pour over one thinly sliced red onion. Refrigerate over night.
The next day wash and tear into bit size pieces
2 heads of lettuce
2 pkgs. fresh spinach
Toss with:
3/4 lb. grated Swiss cheese (I have used mozzarella)
1/2 lb. bacon, fried crisp
2 cups sliced mushrooms
Pour dressing over salad when ready to serve serves about 16

Orange Rolls

Mix together in a large bowl
3 cups flour
1/4 cup sugar
1 tsp salt
1 pkg Rapid Rise Yeast
ADD:
2 eggs
5 tbsp vegetable oil
1 cup very warm milk
1/4 cup very warm water

Mix together and add enough flour to knead. Knead about 10 min. Let dough rest on counter 10 min. Make a paste of the following; 1 grated orange rind, 1/2 cup butter, softened, and 1/2 cup sugar. Roll dough out in large rectangle. Spread with paste. Roll up like jelly roll and cut in one inch slices/ Place in muffin tins that have been sprayed. Let rise 1-1 1/2 hours. Bake at 375 for 10-12 min. Makes about 12 rolls.

Nana's Split Levels

1 cup Chocolate Chips
3 oz Cream Cheese
1/3 cup evaporated milk
1/2 cup walnuts
1 tsp vanilla

Combine in sauce pan except walnuts and vanilla. On low heat stirring constantly until melted remove from heat and add nuts and vanilla. Set aside.

1/2 cup butter, softened
1 egg
3/4 cup sugar
1 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt

Mix the above ingredients together by hand until they it is in crumbly pieces. Press 1/2 of mixture in to greased pan. Pour Chocolate mixture on top and then sprinkle the rest of your dough on top of the mixture.
Bake at 375 for 20-25 min.

Pumpkin Dip

2 8oz cream cheese softened
1 lb powdered sugar sifted
2 cups pumpkin
2 tsp (+) cinnamon
1/2 tsp ground cloves (+)
Dash of Nutmeg (optional)

Use an electric mixer and cream together.
Serve with Ginger cookies, apples or anything you would like.

Simple Chocolate Mousse Cheesecake

1 package (8 ounces) cream cheese, softened
1/3 cup sour cream
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1 box (2.8 oz) Dark Chocolate Mousse Mix
1/3 cup milk
1 (6 ounces) prepared graham cracker crust
Whipped Cream
Fresh Fruit

BEAT cream cheese and sour cream in large mixer bowl until smooth. Add sugar and vanilla extract; beat until smooth.

BEAT mousse mix and milk in small mixer bowl on medium speed for 2 minutes, or until lighter in color and smooth. Fold into cream cheese mixture; spoon into crust.

REFRIGERATE for 4 hours or until firm. To serve, garnish with whipped cream and fruit.

Slow-Cooker Beef and Bean Burritos

1-2 lb London Broil
1 (1.2.25 oz) pkg Taco seasoning mix
Cooking spray
1 cup Chopped onion
1 tbsp White vinegar
1 (4.5 oz) can Chopped green chiles
1 (16 oz) can Fat-free refried beans
12 (8 in) fat-free Flour Tortillas
1 1/2 cups (6 oz) Shredded Monterey Jack Cheese
1 1/2 cups Chopped plum tomato
3/4 cup Fat-free sour cream

Preparation

Trim fat from meat; rub seasoning mix over both sides of meat. Place meat in electric slow cooker coated with cooking spray; add onion, vinegar and green chiles. Cover with lid; cook on low-heat setting for 9 hrs. Remove meat from slow cooker, reserving cooking liquid; shred meat with 2 forks. Combine meat and reserved cooking liquid; stir well.
Warm beans and tortillas according to package directions. Spread 2 tbsp beans down middle of each tortilla. Spoon a heaping 1/3 cup meat mixture on top of beans. Top each with 2 tbsp cheese, 2 tbsp tomato, and 1 tbsp sour cream; roll up.

Chicken Pot Pie

1 can cream of Potato Soup
2 cups Veg-All (drained)
1/2 cup milk
1/4 tsp. Thyme
Dash of Pepper
Add 1 cup cooked and shredded chicken
2 frozen pie crusts (thawed) or you can make your own crusts

Mix filling and put in pie crust, take other crust and place on top of the crust and mix. Bake at what ever temperature and amount of time your crust calls for.

Pie Crust (this is for one a 2 pie crust)

1 cup Flour
1/2 cup Crisco
1/4 tsp. salt
1/4 cup water

mix together with a fork. you may need to add a little more flour. Knead the dough and roll out and place in pie dish.

Easy Lasagna

2 small pkgs. frozen large cheese filled ravioli
1pkg. frozen spinach
1 cup cooked ground beef (optional)
1 Jar spaghetti Sauce
Cheese

In baking dish, layer spaghetti sauce, ravioli, spinach, beef and cheese until baking dish is full. Then layer with grated cheese. Bake uncovered in oven at 350 degrees until bubbly.

Molten Chocolate Surprise

Prep time: 15min
Total Time: 28min
Makes: 1 doz. or 12 servings, one cake each

What you will need:

4 squares BAKER'S semi-sweet chocolate
1/2 cup (1 stick) butter
2 whole eggs
2 egg yolks
1 cup powdered sugar
1/3 cup flour
12 CHIPS AHOY! Cookies
1/2 cup thawed COOL WHIP Whipped Topping

Heat oven to 425. Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir with whisk until chocolate is completely melted. Beat whole eggs, yolks, sugar and flour with whisk until blended. Gradually beat into chocolate mixture.

Line 12 (2-1/2 inch) muffin cups with paper liners; spray with cooking spray. Place 1 cookie, upside-down, on bottom of each cup; cover with batter.

Bake 8min. or until cakes are firm around edges but still soft in centers. Let stand 1 min. Carefully remove cakes from pan. Invert into dessert dishes; remove paper liners. Serve with whipped topping.

Shreaded Beef with Mushroom Sauce

Cook your roast the way you like it saving the drippings.
Shred your roast and put it in a Crock pot. Mix cream of mushroom soup(for an average size roast I add about a full 26oz can of soup) and some of the drippings until the consistency that you like. Let this cook in the crock pot on low for a couple of hours and serve over rice.

Cheese and Ranch Biscuts

Mix all together:
2 cups flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup shortening
3/4 cup milk (buttermilk also works)
grated cheese (as much as you would like)
dry ranch dressing mix (about 1/2 a package)

Bake at 450 for about 7-10 min or until golden brown.

Banana Bread

Cream together:
1/2 cup shortening
1 cup sugar
2 eggs

ADD:
4 tablespoons milk
1 2/3 cup flour
1 teaspoon soda
1/2 teaspoon salt
1/2 teaspoon vanilla

Make sure all of this is well mixed and then you can add 1/2 cup chopped nuts if you would like and 3 Large banana's. Put in well-greased and floured pans. Bake at 350 for about an hour.

Nana's Chocolate Chip Cookies

Cream together:
2 cups brown sugar
1lb butter
1 1/2 cups sugar

ADD:
3 tablespoons vanilla
3 eggs

Slowly Add:
6 cups flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
4 cups chocolate chips

bake at 375 for about 8-12 min. let cool on pan for about 3-5 min before removing them.

(I also like not putting all the flour in and adding oatmeal about 1 1/2-2 cups of oatmeal. I just keep about 1/4-1/2 cups of the flour out when adding the oatmeal)

Quick Chocolate Mousse


1(14oz) can Sweetened Condensed Milk
1 cup cold water
1(4 serving size) package instant chocolate flavor pudding mix
1 cup whipping cream, whipped(I used cool whip and it tasted good)

In large bowl, combine sweetened condensed milk and water. Add pudding mix; beat well. Chill 5 minutes. Fold in whipped cream or cool whip. Spoon into serving dishes; chill. Garnish as desired store leftovers covered in refrigerator.

Beef & Asparagus Stir-fry

1 1/2 pounds asparagus
8oz spaghetti noodles
1/2 cup light soy sauce
1 1/2 teaspoon ground ginger
2 teaspoon cornstarch
4 teaspoons vinegar
1 1/2 teaspoon sugar
2 cloves garlic, minced
3/4 pound top round steak, thinly sliced
1 Tablespoon oil
1 small tomato, seeded & diced

In medium bowl mix soy sauce, ginger, cornstarch,vinegar, sugar, garlic and 1/2 cup water. Add beef, tossing to coat well. Set aside.

Cut asparagus into 2 inch long pieces. In a 12 inch skillet over high heat. Add oil and cook asparagus, stirring frequently, until tender-crisp. Add beef and sory sauce mixture and cook over high heat, stirring constantly, until beef just looses its pink color and sauce boils and thickens slightly.

To serve spoon meat mixture over spaghetti noodles and sprinkle with diced tomato.

Buttercream Frosting

6 tablespoons butter, softened
Cocoa powder, see below
2 2/3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

For light chocolate frosting use 1/3 cup cocoa powder. For medium chocolate frosting use 1/2 cup cocoa powder for dark chocolate frosting use 3/4 cup cocoa powder.
In mixer bowl cream the butter. Add the cocoa and powdered sugar alternately with milk. Beat to spreading consistency adding more milk if needed. Blend in vanilla.
This makes about 3 1/4 cups. You will need to double it or triple it for the 3 layer cake.

Chocolate Buttermilk Cake


4 sqrs Baking Chocolate
1 cup Butter (softened)
2 1/4 cups Granulated sugar
1 1/2 cups Buttermilk or sour milk
3 cups Sifted cake flour (I used regular flour)
1 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
5 Large Eggs, Separated
1 tsp Vanilla

Melt the baking chocolate over simmering water, and add to the butter and sugar creamed together well. Add Buttermilk and flour which has been sifted with the baking soda, baking powder, and salt, alternately, then add the well-beaten egg yolks, and the egg whites, stiffly whipped, and lastly the vanilla. Pour into prepared cake pans (Three 9 inch round pans) that have been greased and floured. Bake at 350 for about 30-35min

Alec's Chocolate Butterscotch Cookies

1 cake mix (I like dark chocolate or german chocolate)
2 eggs
1/2 cup oil
Lots of Butterscotch chips

Mix all together and bake at 375 for 7-10min.

They are really good.
